Signature analytics shows each email by its subject, one line per conversation: every reply and forward, who it went to, whether it was opened and when, and which links in the signature were tapped. Taps are exact, opens are approximate. On Enterprise.

You send a proposal. Then, nothing. Was it opened? Was it passed on? Did anybody tap the link?

Looking for one email? Filter by its subject, and every tab shows that conversation alone.
Taps are exact. Opens are approximate: a reader with images switched off isn't counted. Signature analytics is on Enterprise.
